Don’t we have to milk cows or they’ll get sick and die?

Cows don’t produce milk because they’re cows. They produce milk for the same reason humans do - because they’re mothers. In the dairy industry, cows are forcefully impregnated via a device the industry calls the “rape rack”, then when their babies are born they’re immediately taken away, so the farmers can hook the new mothers up to machines to take all of their milk.

Cows in the wild that are left alone by humans do not get sick and die from not being milked. They mostly graze fields for food and get pregnant naturally, and have their babies around to drink their milk. Cows, just like humans and all other mammals that produce milk, have self-regulating mechanisms in their bodies to control how much milk they need to produce. It is only due to human intervention with selective breeding and unnatural feeding that dairy cows produce so much milk. So in dairy farming, since the cows’ babies have been taken away from them and aren’t around to drink their milk, their milk supply can build up and lead to complications or even death.
